Hello to my fellow Foodies !
My name is Lisa Giacomini. I have been a Mendocino County resident for over 30 years. My love of cooking and nutrition has been a life-long ambitious journey that I have used as solace from an engineering/ Inventor's world, developing my own recipes based on classics, but with fresh ingredients using my background in raising nutritionally superior foods, hunting and gathering as well as exploring the knowledge as it relates to food using my professional, but seemingly unrelated careers to pursue my food passion.
I was raised in Trinity County, CA to a subsistence lifestyle. We hunted, we gathered, we raised our own animals for food. We had a 1/2 acre garden where we worked tirelessly throughout the spring, summer and autumn months to nurture, harvest and preserve everything we grew. Nothing went to waste. We visited the coast 3 times per year to get surf fish, smelt, red-ear perch, rockfish, clams, oysters and mussels. At 12 years old, all of us had our hunter safety course done and had 2 blacktail deer tags each year in order to support our family. My dad hunted bear and we all hunted upland game birds. We lived as much off the land as was possible. Being sportsmen, we understood the importance of conservation and sustainable resources and practiced that our entire lives.
Growing up with the nose-to-tail mantra was critical in appreciating all that was there for us to use and being responsible about it. My dad taught us everything from fishing for every species of fish, hunting all that we could and being stewards of the land. He taught all the other kids in our neighborhood of Junction City that as well and would chastise those teenage boys that didn't take care of animals or fish correctly, reporting them to their own fathers. He knew what he was talking about and although there was never any yelling, you just never wanted to embarrass or shame the family by not respecting the forest or the lakes, rivers, streams and ocean. He taught me everything I needed to know to use these precious ingredients to make delicious, wild, organic foods. My father was a fisherman, logger & owned a small excavating company, and all "unrelatable careers" or so it seemed. But I see now that although his experiences were not all food focused, each and every thing that he did was important when it came to applying his diverse knowledge to his real passion, which was creating food from our numerous, natural resources and I was his willing apprentice.
From learning how and when to harvest foods from the forest, to skinning and butchering animals, smoking fish, canning vegetables, making ferments & specialty family recipes, I had a foundation that most children never get. There was an extensive amount of knowledge to be learned just keeping foods safe in all types of weather with limited freezer space and the different ways of preservation for everything we gathered, hunted and used. Then there was the outdoor cooking that was involved and evolved every time, and everywhere we went.
I had many interests throughout this life. I felt as though each and every thing I have been exposed to or explored has had an impact on my cooking.
While studying anatomy and physiology in college, it was only logical to study human nutrition and how our bodies use nutrients to heal us or keep us from getting illnesses. Another area of study for me was that of human disease. Fascinating stuff and eventually proved "relatable" to my cooking. But how would my passion in the field of inventing and mechanical engineering work into this equation? I saw a distinct correlation between all three things, plus the nutrition aspect of each food and how it could help us all lead a healthier, tastier and more satisfying lives.
The mechanical and physics of food is definitely something I feel is super important when learning the fine art of cooking. With that foundation, the creative side is what can now develop. Without understanding food physics, it is impossible to be a great cook. I enjoy teaching those fundamentals.
I'm not just the cook, I am the fisherman. I am the diver. I am the hunter. I am the person who can hunt it, kill it, cook it and serve it. I prefer not to do the dishes afterward but I can do that too. I love animals and own several dogs, cats and horses and live amongst cows, donkeys, sheep and the cows. I love teaching useful skills to others and love where and how I live.
For all the important men friends I have known that have delivered everything from Abalone and rockfish, & salmon to large rattlesnakes and gray squirrels, quail and wild boar, pheasants, black bear and black tail deer to my kitchen door just so I could cook them for you, I am forever grateful. Without mentors and providers in my life, this chapter would never have been written. It has been an interesting life so far.
